The wine pours a pale straw color with a persistent mousse and opens with aromas of lemon, black pepper, snow peas, peaches, and celery root. On the palate, it is tense and vibrant, with high acidity and a long, zippy finish. The lees aging adds subtle texture and complexity, while the oak imparts a gentle smokiness and structure. Its saline minerality and earthy undertones make it a compelling match for oysters, scallops, sushi, and delicate vegetable dishes, as well as richer fare like roast chicken or mushroom risotto, where its acidity cuts through and elevates the flavors.
